Small Biz Spotlight: Mixed Fillings Pie Shop | Chef Natashia Burton
In the heart of Downtown Jacksonville, there’s a shop baking up more than just pies — it’s baking up community. Mixed Fillings, the sweet and savory pie shop founded by Chef Natashia Burton, has become a Downtown staple for foodies and families alike.

Mixed Fillings serves up whole pies, slices, and even pie flights, offering a rotating menu that changes with the seasons. “Pie is one of the oldest baked goods in the world and it’s shared across all cultures,” says Burton. “Whether it’s a quiche, a tart, or an apple pie, it’s something universally recognized—and it feeds people in every sense of the word.”
Burton and her husband chose Downtown Jacksonville for a reason. “DTJax really incentivizes small businesses, and there’s so much energy from developers and the DIA working to bring new life to historic buildings,” she explains. “Pie is history, and it just makes sense to serve it in a historic district.”
The shop opened on Pi Day (March 14, 2025); a fitting start for a pie-centered business. Mixed Fillings is family-owned and operated, built without investors or outside funding. In fact, Burton and her husband sold their home to pursue the dream. “It’s completely our love, blood, sweat and tears,” she says. “We came to Jacksonville to make it a more compassionate and kind place, and we use our pies to do that.”
Burton describes every pie as her “child,” with seasonal flavors and special creations, like the upcoming 904 Pie for Small Business Saturday, a flaky-top pie stamped with “9-0-4.”

Mixed Fillings has its share of memorable customer moments. Burton recalls one in particular: “A customer came in while she was in labor with her third child. She knew once she got to the hospital, she wouldn’t be able to have pie, so she stopped by in the middle of contractions. She came back a week later, baby in arms, to introduce us. That’s the power of pie—it connects people to life’s biggest moments.”
Pie It Forward Florida

Looking ahead, Mixed Fillings is expanding its mission with Pie It Forward Florida, a fundraising initiative designed to make the state “more compassionate one slice at a time.” The program will uplift and support local organizations serving the community, with pie sales helping fund their work.
Burton sees Mixed Fillings as more than just a shop. “Luckily, there aren’t many pie shops here in Jacksonville,” she says. “That gave us the chance to do something unique and impactful. Pie is comfort, pie is history, pie is love, and we’re honored to share that with DTJax.”
